I am not an expert in rice dishes and paellas, but it is surely one of the best I have eaten since I have lived in Spain. And that it is in a town (Gata de Gorgos, Alicante, Valencian Community) and not in a big city restaurant, much better. Since they receive you as if you were their best client, things already look good. Thank you very much for having delighted us with the best paella I have tried so far.
