You could say I was saving the best for last – I don’t even know where to begin with this great restaurant. Firstly, it’s nestled inside the Fairmont Kea Lani (which by the way deserves to be on a postcard, it is so unbelievably gorgeous inside). I’m definitely going to have to stay here when I come to Maui next time, even if it’s just for one night! Please note that I was invited to review Ko and that my meal was paid for. Anyway back to Ko, this restaurant is located downstairs and to the left. It’s open air and many parts of the seating area have this wonderful view of the beach, palm trees and the sunset. Our particular booth had a marvelous view. Our server Luiz was very helpful and friendly. He came to check on us frequently and gave us a little background on Ko (which literally translates to sugar cane in English). Award-winning Executive Chef Tylun Pang has designed a menu that is very similar to the residents of Maui – a fusion. That is, a fusion of Hawaiian, Chinese, Filipino

We had the Kobe ahi hot rock appetizer, which were both excellent, and since you cook the ahi yourself on the stone, it was engaging fun for the kids, and they loved it which was amazing since the ahi was only seared! The server was super accommodating and came back with a reasonable suggestion for our 13 year old, who wanted a steak but wasn 't hungry enough for the rib eye on the menu; she offered a petit filet for $22 vs. the $46 we would have had to spend otherwise. We had Walu in a macadamia nut crust that was fabulous. Great first night in Maui!

Nearly 90 percent of the produce served at Ko is from local farmers. The Mauka Harvest Salad has a blend of five baby lettuces from Triple N Farm, as well as Pohole Fern Shoots picked by the Kanoa family in Hana. A portion of the sales from this salad is donated to Maui County Farm Bureau’s Growing Future Farmers Initiative. Ahi on the Rock is THE signature dish of Ko. It is sashimi-grade tuna, brushed with macadamia nut oil and is brought to your table seasoned with shichimi pepper and Molokai artisan sea salt, made by salt-master Nancy Gove. You s
