Having had the privilege to sample Crisci's meals a couple of times, we have to applaud him and his restaurant for doing three things.First for consistency in its decor, professionalism, welcoming attitude, and all the elements that combine to create a first-rate experience.Second, for the food, which on any given day is a delight for the senses, be it the presentation or combination of flavors. More importantly, there's a refreshing willingness to experiment which is often very successful and surprising (a few years back it was about using chocolate in unheard of ways).Third, for keeping it real and not disappearing up their own back-sides. Yes, this is fine dining, but - and this is a distinction in Europe - you're never treated as though you're lucky to even be there. There's a sense that Crisci and his staff want to make you discover things and take you a fun journey, something that really makes them stand out.We recommend this wholeheartedly. The quality of what goes on your plate at this restaurant is formidable. Food is flawless and elegantly presented. Service is attentive and discrete. The highly celebrated chef also took the time to visit all table and politely make sure customers were having a great time. I only have one suggested area of improvement . When looking at the menu, I was drawn by what seemed to be an interesting wine pairing forfeit, to be managed by the sommelier (fine with that). When the bill arrived, we saw that each wine the sommelier chose for us was charged by the glass. I am not going to comment on exactly how expensive each glass was, but that is not the way it works at other establishment of this level. When I choose the wine pairing option, I don't like to wonder how much I am going to be charged for each glass that is being poured. No. I like to relax and think that a forfeit is a forfeit. Make it expensive if quality allows it, but make it a forfeit. Other than that, great experience.

This was only the third time we were at Carlo Crisci's Restaurant in Cossonay (I wish we were oftener there). Note that it is always easy to find a parking space there at a distance less than about 200 m away from the Cerf. The Gault Millau Guide attributes 18 point to this restaurant - a very high rating. We ordered one of the proposed menus and were served some 5 different dishes; each delicious, most with a very discrete flavour; nothing boomy. Fabulous fish dish, delicious cuisse de canard, sumptous choice of cheeses. Count on spending up to 200 Swiss francs per person. Note that Carlo Crisci operates a brasserie in the same building with a simpler choice of dishes.

The starter fish was raw, the main dish, also fish, was cold. The staff greatly outnumbered the clients, were intrusive, interrupted conversation several times.
