"It doesn't happen very often where you go to a restaurant and just can't stop talking about what an amazing and special experience it was the whole way home. Carlos personally greeted us as we drove in, selected out the perfect wine, and even took the time to get to know us by name. The food and service was simply phenomenal and worth every penny. Our server Molly also made us feel truly at home and cared for. This is hands down my favorite restaurant I have been to in Colorado Springs. If you haven't been, you're missing out big time."

My husband and I love food. We live in a small town with limited options to eat, and we cook most of our own food. So if we visit a larger city, we want to try the best places! We found Carlos Bistro through a Google search of the Top-Colorado Springs restaurants and a reservation. When we raised a few minutes before 4 we were ready to wait, but Carlos came to our van, greeted us with name and congratulated us on our anniversary. He led us in and put us on a table ready for us. Then he checked the early bird menu and brought us to our server. The aesthetic of the interior was everything you could hope: calm, dimmed lights, candles, wood, old world decoration. We started with drinks: I myself a pisco mad and an old fashion for my husband. Both were stellar and well paired with French bread and French butter. We ordered the ratatouille bruschetta for a starter – a real experience for the tasters. I knew we were for a real treat when our main dishes showed up on time. For me, the Kalbmarala. For my husband mignon. We had our choice from sides — Saffron risotto, steamed broccoli and wild rice. Plattier art was amazing and food was even better. I tried to finish everything, but I finally had to give up. We sat at our table for a while and enjoy the ambience and dive on a beautiful red recommended by our server. Then we have forced ourselves to order dessert; rich and creamy crème brûlée and cheese cake Crepe. Carlos came several times to check and chat – my only regret is that we don't get to hear his whole story! Look at Colorado Springs – we will try to move him to Montrose! Definitely give this restaurant a shot for your next company dinner, date night or special day.

This is my head toe review: Let me start by screaming for Stephanie! That woman was there. She took care of us very well during this culinary experience. Never had to wait until the refills Cuz was up there and the bread flowed. OMG THAT DELICIOUS BREAD. I'm pulling bread and that was amazing. Speaking amazing, the aesthetic offered an intimate setting and I love the fact that the last seats at 7p is to avoid distraction from your current company, but the staff was left until the last cartridge. Carlos, the owner and the chef, was engaged, personalized and offered great ideas for food. The menu is large and the selection of food is also not your typical pile. There was so much taste in our meals. I really wanted to try everything. The appetizers saw and tasted delish (we got the shrimp cocktail and crab cake). Our main meals were the paella and fruit de mar and we were filled. I wish I had room for Dessert! If I'm asked for corporate food ideas, I definitely put Carlos Bistro in the hat drawing. This experience was worth every penny and I am happy to visit REAL again soon.

Wow. My friend and I were here from out of town and it was a highlight to end the trip at this restaurant. The service was so great, Carlos came out and introduced himself right away and got our names. He had a very welcoming atmosphere both inside and out. Our server Stephanie knew lots of knowledge about the menu and had amazing suggestions. Although it is on the pricey side, everything was made with love and we could taste it!! We got the ratatouille bruschetta (great portions! , the crab Alfredo, and pan seared scallops and wow... don’t really have words! Also the cocktails were delicious... the bread pudding also carried well to go and the presentation was perfect even at home. Best service we’ve had in awhile. They represent Colorado well!

Carlos' Bistro In a word... incomparable. Visited to the anniversary dinner with my dear wife. Carlos' was the perfect mix of intimate and friendly. Carlos is always the perfect host and Liz was the bomb. The crab cakes and artichokes buttons are so good that you want to cry. Branzino was fresh, light and perfectly cooked. Filet a la Oscar, there are no words. Serious people, this is true world-class food here in CoS. If you enjoy food prepared with love, do NOT wait another day. Please treat yourself, get out of the house! They won't be disappointed. Carlos and Liz, thank you for a wonderful night!
